Modur Pulao (Sweet Saffron Rice)

Ingredients:

  • 1 cup basmati rice

  • 2 tbsp ghee

  • ¼ cup sugar

  • 8–10 almonds

  • 8–10 cashews

  • 1 tbsp raisins

  • 3–4 green cardamoms

  • 3–4 cloves

  • 1 small cinnamon stick

  • A pinch of saffron

  • 2 cups water or milk

  • 1 tbsp sliced nuts (for garnish)

Instructions:

  1. Soak rice: Wash basmati rice and soak for 20 minutes. Drain and keep aside.

  2. Soak saffron: Soak saffron in 2 tbsp warm milk or water.

  3. Fry nuts: Heat ghee in a pan. Fry almonds, cashews, and raisins until golden. Remove and set aside.

  4. Cook spices: In the same ghee, add cardamom, cloves, and cinnamon. Fry for a few seconds.

  5. Cook rice: Add soaked rice and gently stir for 1–2 minutes. Add water (or milk) and sugar. Mix well.

  6. Add saffron: Pour in the saffron milk and fried nuts. Cover and cook on low heat until rice is soft and fluffy.

  7. Serve: Garnish with sliced nuts and serve warm.
