Modur Pulao (Sweet Saffron Rice)
Ingredients:
1 cup basmati rice
2 tbsp ghee
¼ cup sugar
8–10 almonds
8–10 cashews
1 tbsp raisins
3–4 green cardamoms
3–4 cloves
1 small cinnamon stick
A pinch of saffron
2 cups water or milk
1 tbsp sliced nuts (for garnish)
Instructions:
Soak rice: Wash basmati rice and soak for 20 minutes. Drain and keep aside.
Soak saffron: Soak saffron in 2 tbsp warm milk or water.
Fry nuts: Heat ghee in a pan. Fry almonds, cashews, and raisins until golden. Remove and set aside.
Cook spices: In the same ghee, add cardamom, cloves, and cinnamon. Fry for a few seconds.
Cook rice: Add soaked rice and gently stir for 1–2 minutes. Add water (or milk) and sugar. Mix well.
Add saffron: Pour in the saffron milk and fried nuts. Cover and cook on low heat until rice is soft and fluffy.
Serve: Garnish with sliced nuts and serve warm.
